The key to making perfect over easy eggs is to cook them with a lid on the pan. This helps to keep the heat in and prevents the eggs from drying out. Simply heat a pan on medium, add some butter or oil, and then crack in the eggs. Be careful not to break the yolk, and then cover the pan with a lid. Cook for 2 minutes, or until the yolks begin to have a white sheen. Remove from heat and let sit for an additional minute, and then enjoy!

3 eggs

1 pad of butter or 1 tsp oil

Instructions

1. Heat pan on medium.

2. Add butter or oil until melted.

3. Add eggs to the pan, taking care not to break the yolk.

Breakfast Sausage Casserole

A quick and easy gluten free dairy free breakfast

Ingredients

  1. 12oz sausage links
  2. 10 eggs
  3. 1 red pepper diced
  4. 1 yellow pepper diced
  5. 1 yellow onion diced
  6. 2 cups frozen spinach
  7. 1 tablespoon oil
  8. ½ teaspoon salt
  9. ½ teaspoon pepper
  10. ½ teaspoon onion powder
  11. ½ teaspoon garlic powder
  12. 1 teaspoon hot sauce (optional)
  13. Green onions for garnish (optional)

Directions

  1. Crack eggs into a bowl, add spices & hot sauce.  Whisk together
  2. Dice sausage.
  3. Add sausage to pan, cook on stovetop at medium heat thoroughly for approximately 5 minutes, set aside.
  4. Dice peppers & onions.
  5. Add oil, onions and peppers to a preheated pan, cook until soft, approximately 5 minutes.  Add spinach and cook for an additional 5 minutes.
  6. Add eggs, vegetables, & sausage to a 9×13 glass pan.
  7. Bake at 350 for 25-30 minutes until thoroughly cooked.
  8. Remove from the oven and let sit for 5 minutes.
  9. Cut and garnish with green onions.
  10. Enjoy!
