Ingredients
- 4 boneless chicken thighs
- 1 yellow onions
- 1 red pepper
- 1 14 oz can diced tomatoes (with green chiles for added spice)
- 1 packet dry enchilada seasoning or make your own
- 3 cups baby potatoes
- Fresh cilantro for garnish
- ΒΌ cup coconut cream
- 1 teaspoon apple cider vinegar
- 1 juice of lime or 1 tablespoon lime juice
Directions
- In slower cooker place thighs on bottom in single layer
- Add all other ingredients with the exception of cilantro
- Cook on low for 4-6 hours until chicken can be pulled apart
- Garnish with cilantro
- Enjoy!
